PROBLEM TO BE SOLVED: To provide a rolling apparatus and a cutting apparatus of a noodle making machine, capable of providing noodles having appearance and mouth feeling or the like specific to handmade noodles.SOLUTION: A primary pressure extension part 2 having a regular or irregular uneven shape is provided to a primary rolling apparatus 1 used when rolling dough 3 of noodles, and thereby dough 6 of primary rolled noodles can be provided in the uneven shape specific to handmade noodles. Further, a cutting blade 5 having the regular or irregular shape is provided to a cutting apparatus 4 used when cutting the dough 6 of primary rolled noodles, and thereby cut noodles 9 can be provided as uneven noodles specific to the handmade noodles.
