PROBLEM TO BE SOLVED: To provide a cutting blade roll for noodle making, noodle strips, a noodle strip slitter, and a noodle making device capable of changing the appearance and texture of noodle strips and contributing to the development of new noodle products and also to the exploitation of new markets of needle products.SOLUTION: A cutting blade roll for noodle making has a pair of cutting blade rolls with a cutting blade on each roll shaft and forms noodle strip cutting grooves between the pair of the cutting blade rolls so as to cut out noodle strips from a noodle belt. A cross-sectional shape of the noodle strip cutting groove is an approximately star-shape. It is also possible to form the cross-sectional shape of the noodle strip cutting groove in the approximately star-shape by connecting between vertices of a polygon towards the inside of the polygon with a constricted side. Likewise, it is possible to form the cross-sectional shape of the noodle strip cutting groove in the approximately star-shape while expecting that the cross-sectional shape of the noodle strip changes into an approximately polygonal shape when the noodle strip swells.COPYRIGHT: (C)2014,JPO&INPIT【課題】麺線の見た目や食感に変化を与え、新たな麺製品の開発に寄与し、麺製品の新たな市場の開拓にも寄与する製麺用切刃ロール、麺線、麺線切出し機、および、製麺装置が求められている。【解決手段】製麺用切刃ロールにおいて、ロール軸に切刃を備えた一対の切刃ロールを有するとともに、前記一対の切刃ロール間に麺線切出し溝を形成して麺帯から麺線を切出す製麺用切刃ロールであって、前記麺線切出し溝の断面形状を、略星形の形状に形成する。また、前記麺線切出し溝の断面形状を、多角形の頂点間をその多角形の内側に向けて括れた辺で接続して前記略星形の形状に形成しても良い。また、前記麺線が膨潤することによって、その麺線の断面形状が略多角形に変化することを見込んで、前記麺線切り出し溝の断面形状を前記略星形の形状に形成しても良い。【選択図】図5
