PROBLEM TO BE SOLVED: To prevent defective forming of a coarse noodle sheet such as breakage of the coarse noodle sheet, nonuniformity of thickness, defective width and perforation and defective shape of the coarse noodle sheet such as a convex shape in an apparatus for forming a noodle sheet.SOLUTION: The apparatus 1 for forming the noodle sheet is designed as follows. Dough 3 is fed from the upper side between a pair of coarse noodle sheet rolling rolls 2 and the dough 3 is pushed between the pair of coarse noodle sheet rolling rolls 2 by a reciprocating motion of a dough pushing plate 7 supported by a stay 26. The dough 3 is rolled by rotation of the pair of coarse noodle sheet rolling rolls 2 to form the coarse noodle sheet 4 which is rolled by rotation of a pair of noodle sheet rolling rolls 5 to form the noodle sheet 6.
