Described is an extraction process for the isolation of oleanolic acid from Phoradendron tomentosum Macrophyllum. The process comprises the following steps: a) drying the vegetal material, b) degreasing the vegetal material with hexane, c) extracting the degreased vegetal material with medium-polarity solvents, d) concentrating the extract of the plant, e) purifying the concentrate using a step of column chromatography and a mixture of two solvents as mobile phase, and f) removing polar impurities by crystallising the oleanolic acid into methanol. The process results in an oleanolic acid of at least 95% purity, and a yield of 0.7% of the leaves and 0.25% of the stems. The oleanolic acid of high purity resulting from the present process may be added to food supplements, cosmetic or pharmaceutical formulations.La presente invención se refiere a un proceso de extracción para el aislamiento de ácido oleanólico a partir de Phoradendron tomentosum Macrophyllum. Este proceso comprende los pasos: a) secar el material vegetal, b) desengrasar el material vegetal con hexano, c) extraer el material vegetal desengrasado con solventes de polaridad intermedia, d) concentrar el extracto de la planta, e) purificar el concentrado en utilizando un paso de cromatografía en columna y una mezcla de dos solventes como fase móvil, y f) eliminar impurezas polares cristalizando el ácido oleanólico en metanol. El proceso da como resultado áido oleanólico con al menos 95% de pureza, y un rendimiento de 0.7% de hojas y 0.25% de tallos. El ácido oleanólico de alta pureza obtenido de este proceso se puede incorporar a suplementos alimenticios, formulaciones cosméticas o farmacéuticas.
