PROBLEM TO BE SOLVED: To provide a molding box for molding soybean curd which makes patterns equivalent to those when using filtering cloth appear on the surface of a molded soybean curd.SOLUTION: The molding box for molding a soybean curd includes: a top-opened molding box body 10 made by detachably attaching a bottom plate 30 to the bottom part inside a frame 11 a pressure lid 40 and drainage surfaces 27, 37, 57 provided with many water permeation holes formed at the side surface of the molding box body 10 (the frame 11), the bottom plate 30 and the pressure lid 40. Metal mesh 60 is stretched over the whole of the lower surface of the drainage surface 57 on the pressure lid 40. When the soybean curd liquid Tr is charged into the molding box body 10 and pressurized with the pressure lid 40, the water is drained from the soybean curd liquid Tr through the water permeation holes at the drainage surfaces 27, 37, 57, and the soybean curd liquid is coagulated inside to form a soybean curd. Fine patterns having minute holes similar to those of a filtering cloth appear along the meshes of the metal mesh 60 at the upper surface of the soybean curd to which the metal mesh 60 is applied.COPYRIGHT: (C)2010,JPO&INPIT【課題】成形された豆腐の表面に濾過布を使用した場合に匹敵する模様を現出させる。【解決手段】枠体11内の底部に底板30を着脱可能に装着してなる上面開口の型箱本体10と、押し蓋40とを備え、型箱本体10の側面(枠体11)、底板30及び押し蓋40に、多数の透水孔が形成された水切り面27,37,57が設けられる。押し蓋40における水切り面57の下面の全面に、金属メッシュ60が張設される。型箱本体10内に豆腐液Trが充填されて押し蓋40で圧縮すると、豆腐液Trから水切り面27,37,57の透水孔を通って水抜きされ、内部で凝固して豆腐が成形される。金属メッシュ60が当てられた豆腐の上面には、金属メッシュ60の編み目に倣い、濾過布に似た微細な孔が空いた細やかな模様が現出される。【選択図】図3
