INGESTION-ASSISTING OLEAGINOUS COMPOSITION FOR PERSONS HAVING DIFFICULTY SWALLOWING/MASTICATING, AND FOOD FOR PERSONS HAVING DIFFICULTY SWALLOWING/MASTICATING
The present invention relates to: an ingestion-assisting oleaginous composition that is for persons having difficulty swallowing/masticating and that is obtained by rapidly cooled mixing/kneading processing of a composition having an SFC of 3-18% in the range of 5-25°C and containing an oil and an emulsifier having an HLB value of 1-10； a food for persons having difficulty swallowing/masticating containing shredded or pulverized edible food and the ingestion-assisting oleaginous composition for persons having difficulty swallowing/masticating； and a method that is for producing the food for persons having difficulty swallowing/masticating and that is characterized by mixing shredded or pulverized edible food with the ingestion-assisting oleaginous composition that is for persons having difficulty swallowing/masticating and that is obtained by rapidly cooled mixing/kneading processing of a composition having an SFC of 3-18% in the range of 5-25°C and containing an oil and an emulsifier having an HLB value of 1-10. As a result, it is possible to provide: an ingestion-assisting oleaginous composition for persons having difficulty swallowing/masticating that can easily produce a food that persons having difficulty swallowing/masticating can easily consume； and a food for persons having difficulty swallowing/masticating that uses same.본 발명은 5-25℃ 범위에서의 SFC가 3-18%인 한편 유지 및 HLB 값이 1-10인 유화제를 함유하는 조성물을 급냉반죽처리하여 얻어지는 연하·저작곤란자를 위한 섭식보조용 유지 조성물, 상기 기재된 연하·저작곤란자를 위한 섭식보조용 유지 조성물과 섭식 가능한 식품의 세단물 또는 파쇄물을 함유하는 연하·저작곤란자용 식품, 5-25℃ 범위에서의 SFC가 3-18%인 한편 유지 및 HLB 값이 1-10인 유화제를 함유하는 조성물을 급냉반죽처리하여 얻어지는 연하·저작곤란자를 위한 섭식보조용 유지 조성물과 섭식 가능한 식품의 세단물 또는 파쇄물을 혼합하는 것을 특징으로 하는 연하·저작곤란자용 식품의 제조방법에 관한 것이다. 본 발명에 의하면, 연하·저작곤란자가 섭취하기 쉬운 식품을 용이하게 제조할 수 있는 연하·저작곤란자를 위한 섭식보조용 유지 조성물, 및 이를 이용한 연하·저작곤란자용 식품을 제공할 수 있다.
