PURPOSE: A red pepper paste containing berchemia root and a manufacturing method thereof are provided to detoxify toxicity including heavy metals such as mercury, nickel, and cadmium and to prevent constipation. CONSTITUTION: A manufacturing method of red pepper paste containing berchemia root comprises the following steps: preparing 13 wt% of wheat, 13 wt% of grain of barley, 13 wt% of bean, 28 wt% of red pepper powder, 2 wt% of glutinous rice, 31 wt% of grain syrup, 3 wt% of saline, filtrate of loess suspension, and berchemia root; manufacturing berchemia root extract by boiling after adding the berchemia root to the filtrate; adding wheat, grain of barley, bean, glutinous rice flour to the berchemia root extract and boiling for 5 hours; storing raw material in which extract and glutinous flour are brewed and storing at low temperature for one day; adding prepared wheat, grain of barley, bean, red pepper powder, and grain syrup after re-boiling the brewed raw material and mixing the same; and manufacturing red pepper paste by aging the mixed red pepper paste at low temperature for 7 days. The rice grain syrup is manufactured by using 50 wt% of rice and 50 wt% of malt.본 발명은 망개나무뿌리를 함유한 고추장에 관한 것이다.본 발명에 따른 망개나무뿌리를 함유한 고추장은, 밀 13중량%, 보리쌀 13중량%, 콩 13중량%, 고춧가루 28중량%, 찹쌀 2중량%, 쌀 조청 31중량%, 식염 3중량%, 황토에 걸러낸 지장수 및 망개나무뿌리를 준비하고, 상기 지장수에 망개나무뿌리를 넣고 달여서 망개나무뿌리의 추출액을 생성하는 공정과 상기 망개나무뿌리 추출액에 준비된 밀, 보리쌀, 콩, 찹쌀가루를 넣어 5시간가량 달이는 공정과 상기 추출액과 찹쌀가루를 달인 원료를 저온에서 하루 동안 저장하는 공정과 상기 달인 원료를 다시 끓인 후 준비된 밀, 보리쌀, 콩, 고춧가루, 조청을 비율대로 넣어 배합시키는 공정 및 상기 배합시킨 고추장을 저온에서 7일간 숙성시켜 고추장을 제조하는 것을 특징으로 하는 망개나무뿌리를 함유한 고추장.
