PROBLEM TO BE SOLVED: To provide a liquid-pasty texture improver mixable with food and drink of wide physical properties, especially food and drink with low viscosity, and to provide a method for easily stably obtaining the texture improver.
SOLUTION: This texture improver contains 0.2-20.0 mass% of (A) a component and (B) a component as below. The content ratio of the components is 0.1<(B)/(A)&le10 on a mass basis, and a water content is 20-98 mass%. The method for producing the texture improver comprises homogenizing a mixed liquid which contains: 0.2-20.0 mass% of following (A) component and following (B) component, wherein the content ratio of the components is 0.1<(B)/(A)&le10 on a mass basis, and a water content is 20-98 mass%. (A) is alginic acid and/or alginate, and (B) is calcium exit.
