PROBLEM TO BE SOLVED: To provide baked confectionery having new unprecedented texture which has an external phase hard like biscuits and an internal phase having a spongy porous structure, and has excellent crunchiness, and to provide a composition for producing the baked confectionery.SOLUTION: The composition for baked confectionery contains starch containing (A) pregelatinized starch and (B) non-gelatinized starch, and further contains at least one selected from (C) wheat protein and (D) oil and fat. The composition contains (A) of 3-10 mass% and (B) of 97-90 mass% based on the total mass of (A) and (B), and contains (C) of not more than 40 pts.mass, and (D) of not more than 40 pts.mass based on the total amount of (A) and (B) of 100 pts.mass.
