PROBLEM TO BE SOLVED: To provide a proliferation inhibitor of heat-resistant acidophilic bacterium, which inhibits proliferation of heat-resistant acidophilic bacterium, prevents deterioration of food and beverage and retains a commercial value during the preservation period of processed food and beverage to be subjected to heat sterilization and comprises a component derived from a natural material.SOLUTION: The proliferation inhibitor of heat-resistant acidophilic bacterium comprises cassis anthocyanin as an active ingredient.
