The present invention provides an ovotransferrin hydrolysate having improved antioxidant activity by hydrolyzing ovotransferrin which is a white protein with TECP, and preparing functional peptides. To this end, a method for manufacturing the hydrolysate of ovotransferrin comprises the steps of: treating TCEP to ovotransferrin of high purity (purity: 98%) and hydrolyzing ovotransferrin； dialyzing the hydrolysate by a dialysis membrane and removing TCEP； centrifugal separating the hydrolysate of ovotransferrin in which TCEP is removed, obtaining a supernatant, and freeze-drying the supernatant； and measuring an activity of inhibiting lipid peroxidation of the freeze-dried sample.본 발명은 난백 단백질인 오버트랜스페린을 TECP로 가수분해하여 기능성 펩타이드를 제조하여 항산화 기능이 증대된 오버트랜스페린의 가수분해물을 제공하는 뛰어난 효과가 있다.
