PURPOSE: A functional noodle is provided to manufacture various kinds of noodles such as fine noodles, cold noodles, chopped noodles by adding black-red ginseng.CONSTITUTION: Noodle comprises black-red ginseng 5-10 parts by weight and saline 0.2-0.4 parts by weight about wheat flour 100 parts by weight. Noodle adds more starch 15-25 parts by weight about wheat flour 100 parts by weight. Starch comprises sweet potato starch 40-60% of weight, and potato starch 40-60% of weight. Black-red ginseng is manufactured by fermenting and ripening ginseng with maintaining temperature of 40-85 deg. C and humidity of 80-95% for 18-22 days in a fermentation and maturation room of hard charcoal and loess(20).
