More particularly, the present invention relates to a method of preparing a black bean beverage characterized by including: a first step for washing and heating black beans at a temperature of 180-200°C for 10-20 minutes to roast the black beans such that the black beans expand to be cracked a second step for adding about 1-10 times of an extraction solvent with respect to weight of the black beans and 1-5 wt% of an malic acid with respect to the weight of the black beans to the black beans which has been roasted in the first step to extract a black bean extract at a temperature of 65-75°C for 1-6 hours a third step for primarily filtering the extracted black bean extract with a sieve of 100 meshes and secondarily filtering the primarily filtered black bean extract with a filter paper of 200-300 meshes and a fourth step for concentrating the filtered black bean extract at a temperature of 70-85°C until all of alcohol thereof is removed to produce a concentrated black bean extract.
