The present disclosure provides a method of extracting total polyphenol. The method includes providing a fruit core； drying the fruit core； after drying the fruit core, collecting a kernel from the fruit core and crushing the kernel into a kernel powder； defatting the kernel powder by a supercritical fluid； after defatting the kernel powder, extracting the kernel powder by alcohol to obtain a kernel extract liquid.本發明提供一種總多酚的萃取方法，包含提供果核；使果核乾燥；自乾燥後之果核中收集核仁，且將核仁粉碎成核仁粉；藉由超臨界流體，使核仁粉脫脂；以醇類萃取脫脂後之核仁粉，獲得核仁萃取液。
