PROBLEM TO BE SOLVED: To provide an oil-and-fat composition suppressing rise in the viscosity of the dough of tempering-type chocolate after tempered, and suitable for coating, particularly for enrober (topping) use.
SOLUTION: The oil-and-fat composition contains 70-85 mass% of oleoyldipalmitin (P2O), has the mass ratio of a symmetric triglyceride (POP) in the oleoyldipalmitin at &ge0.95, and contains 2-6 mass% of tripalmitin (PPP). The oil-and-fat composition is added to the tempering-type chocolate at 3-60 mass%.
