PROBLEM TO BE SOLVED: To provide a composition that enable konjac material to be mixed with other food materials more uniformly at a high concentration while satisfactorily maintaining gelling power or biological process that konjac mannan originally possesses.SOLUTION: The konjac fluid material is produced by swelling konjac powder with water to be dissolved and subjecting the mixture to alkali treatment at pH &ge;10 followed by reducing the pH to <;8, raising the temperature of the mixture while forcedly stirring the mixture, and subjecting the mixture to enzymatic treatment.
