PROBLEM TO BE SOLVED: To provide a processed food product in which a good quality umami component of fish fins, such as sea bream, which were mostly discarded without being fully utilized effectively, is used.SOLUTION: Provided is a processed food product, in which fins are used, obtained by: (a) separating fins from fish such as red sea bream to obtain fins (x) cutting the fins in a horizontal direction with respect to the fin surface (b) drying the separated and cut fins by air-drying (c) heat treating with far infrared ray, followed by (c) heat treating using direct flame (d) encapsulating the obtained fins in a packaging material together with an oxygen scavenger and (e) de-gassing, and also provided is a method for producing the processed food product.
