The present invention relates to a method for preparing a cookie using a bitter melon and, and more particularly, to a method for preparing a cookie comprising: a step for preparing materials to prepare whole-wheat flour, eggs, purified water, cocoa, butter, and salt; a step for melting 16 wt% of the prepared butter to be softened, and mixing by adding 0.1 wt% of salt thereto; a step for mixing 3.7 wt% of a prepared fermentation bitter melon solid after mixing by adding 32.1 wt% of eggs through uniformly separating the same three to five times, to the butter mixed with salt; a step for sifting 32.1 wt% of the prepared whole-wheat flour and 3.2 wt% of the prepared cocoa through a sifter to be evenly scattered and mixed, adding and mixing 12.8 wt% of purified water thereto, and aging for 20-30 minutes in a freezer after kneading the same; a step for forming a cookie by pressing the obtained paste in a form to be prepared by placing a cookie press on an iron plate for baking after inserting the paste into a pressing bag such as a cone; and a step for inserting the iron plate on which the cookie is place into an oven for baking, and packing the baked cookies as a certain unit. The present invention has effects of having effects of a bitter melon as the fermented bitter melon solid is prepared as a cookie or bread; solving a problem which may be generated when only flour is taken, by having chewy properties when a cookie or bread mixed with a bitter melon solid is taken; and developing a consumption field of a bitter melon and promoting consumption of a bitter melon to increase incomes of bitter melon commercial farms. Therefore, provided are a method for preparing a sugar-free bitter melon cookie and a composition thereof.본 발명은 여주를 이용한 쿠키제조 방법에 관한 것으로서, 더욱 상세하게는 통밀가루, 계란, 정제수, 코코아, 버터, 소금을 준비하는 재료 준비단계; 상기 준비된 버터 16중량%를 녹여 부드럽게 한 후 소금 0.1중량%를 넣고 믹싱하는 단계; 상기 소금이 혼합된 버터에 계란 32.1중량%를 3-5회로 균등하게 나누어 넣으면서 믹싱한 후 상기 준비된 발효여주 고형물 3.7중량%를 혼합하는 단계; 상기 준비된 준비된 통밀가루 32.1중량%와 코코아 3.
