PURPOSE: Instant food capable of easily cooking, and a producing method thereof are provided to enable a user to directly eat the food without a cooking process or an easy cooking process. CONSTITUTION: A producing method of instant food comprises the following steps: preparing mixed ingredients including rice and crushed vegetables(S10)； adding water to the mixed ingredients, and heating to obtain mixed rice(S20)； freeze-drying the mixed rice for 5~20hours at -40~-10deg C(S30): drying the freeze-dried mixed rice for 10~30hours using a vacuum drier； separating grains from the dried mixed rice using a granulator(S50)； crushing the mixed rice into mixed powder(S60)； and compressing the mixed powder after adding the moisture(S70).본 발명은 인스턴트식품 및 그 제조방법에 관한 것이다. 본 발명에 따른 인스턴트식품의 제조방법은 적어도 쌀 및 분쇄된 채소를 갖는 혼합 재료를 준비하는 단계와； 상기 혼합 재료에 소정 량의 물을 첨가한 후 가열하여 혼합밥을 생성하는 단계와； 상기 혼합밥을 동결 진공 건조하는 단계를 포함하는 것을 특징으로 한다. 이에 의하여, 제조 공정수를 줄일 수 있으며, 식감이 뛰어나면서도 그대로 섭취 가능하거나 조리하기가 용이한 인스턴스식품 및 그 제조방법을 제공할 수 있다.
