PROBLEM TO BE SOLVED: To provide an oil-in-water type emulsion with excellent emulsion stability and low viscosity, and an efficient production method thereof.
SOLUTION: The oil-in-water type emulsion is formed by emulsifying a hydrophobic compound (a) with a polymer compound b having a group represented by the following formula (1) in at least side chains, and contains water soluble sugars c in the water phase, with a water content of 40-90 mass%. The production method of the oil-in-water type emulsion comprises a process of mixing the oil-in-water type emulsion formed by emulsifying the hydrophobic compound (a) with the polymer compound b with water soluble sugars c. The hydrophobic compound formula is -(OX)
