PROBLEM TO BE SOLVED: To enable tasting both change of color and change of meat texture and safely eating by heat-treating hormone in a pretreatment stage, and soaking in boiled broth as the charm of shabu-shabu (thin slices of meat parboiled in hot soup).SOLUTION: A hormone mass of pig is pretreated by at first washing the hormone in water in order to remove the smell of the hormone mass, passing the hormone mass through high temperature water in order to heat-sterilize the surface, and completing the pretreatment by thinly cutting the product.
