PURPOSE: A manufacturing method of purple corn extract is provided to cause no concern over side effects or toxicity and to mass produce the purple corn extract which has excellent disease preventing or treating effects against cancer, hypertension, diabetes, diabetic complication, and the like. CONSTITUTION: A manufacturing method of purple corn extract comprises extracting purple corn with C1-C4 level of low grade alcohol solvent having 5-80% concentration. 1:10-20 volume times of the C1-C4 level of low grade alcohol solvent is used based on the weight of the purple corn. The solvent additionally includes one or more acids selected from a group including hydrochloric acid, nitric acid, sulfamic acid, perchloric acid, acetic acid, formic acid, lactic acid, and oxalic acid. The solvent includes the 0.1-20% of acid. In the extraction step, the purple corn is extracted by the C1-C4 level of low grade alcohol solvent having a 5-80% concentration at 20-60 deg. Celsius for 4-24 hours. The extraction step is completed by ultrasonic wave extraction with a vibration intensity of 150-300 watts for 8-20 minutes. The ultrasonic wave extraction is performed for 9-16 minutes to increase overall yield and aldose reductase suppression ratio.
