PROBLEM TO BE SOLVED: To provide a method for manufacturing a fermented food product which allows soybean milk as a liquid to be fermented to be properly solidified even in the case of using Narine bacteria, i.e. animal lactic acid bacteria, with the live narine bacteria directly reaching the human bowel and the fermented food product.SOLUTION: The method for manufacturing a fermented food product includes: a step 110 for manufacturing soybean flour having an average particle diameter of 50 μm or less a step 120 for manufacturing soybean milk from the manufactured soybean flour a step for manufacturing a liquid to be fermented by blending and agitating the soybean milk and Narine bacteria and a step for fermenting the manufactured liquid to be fermented by lactic acid bacteria.COPYRIGHT: (C)2014,JPO&INPIT【課題】動物性乳酸菌であるナリネ菌を用いた場合であっても被発酵液としての豆乳が適度に固化し、且つ、ナリネ菌が生きたまま人間の腸まで届く発酵食品の製造方法及び発酵食品を提供する。【解決手段】発酵食品の製造方法は、平均粒径が50μm以下の大豆粉製造工程110、製造した大豆粉を用いて豆乳液を作製する豆乳液製造工程120、豆乳とナリネ菌とを混合撹拌することにより被発酵液を製造する工程と、この製造された被発酵液を乳酸菌発酵する工程とを含む。【選択図】図1
