The present invention provides a brewing structure with flow rate adjustment, which comprises a main body and a valve cover. The top surface of the main body is configured with a first opening allowing the liquid flowing in, and the bottom surface is configured with a second opening, wherein the second opening is communicated with the first opening. The valve cover is configured with a through hole, and has the periphery of its top surface surrounded with a packing portion. The packing portion is penetrated with a plurality of slots, and the packing portion may be introduced through the second opening to be received within the main body and further to be tightly abutted against and positioned onto the inner sidewall of the main body, such that these slots will be sealed by the inner sidewall of the main body. When a part of the packing portion is moved to be exposed from the accommodation space, a part of the slots will also be moved along with to be exposed from the accommodation space, such that the liquid flowing into the main body will not only flow out from the through hole, but also flow out from the slots.
