PROBLEM TO BE SOLVED: To provide a method for mass-producing matured garlic that is excellent in antioxidation performance, and good to eat.SOLUTION: In the method, peeled garlic is used, it is impregnated with reduced quantity of water to make a water saturation state, and a pressurization state by water dilation is maintained while it is sealed in temperature lower than boiling.
