PROBLEM TO BE SOLVED: To provide an industrially advanced method for producing vegetable powder which is unlikely to form unmixed lump of powder, when mixed with hot water or warm water on eating, is excellent in dispersibility, and has a good flavor, to provide vegetable powder obtained by the method, and to provide a powdery or granular precooked food using the vegetable powder and excellent in dispersibility.

SOLUTION: There are provided: the method for producing the vegetable powder, including the step for treating a starch-containing vegetable paste with a starch hydrolase in conditions not inactivating the enzyme until the paste has a constant viscosity, and then heating the mixture up to a temperature for inactivating the enzyme, the step for mixing 40 to 80 pts.wt. of the paste obtained in the step with 20 to 60 pts.wt. of the starch-containing vegetable paste not treated with the enzyme, and the step for drying and pulverizing the mixed paste obtained in the step with a drum dryer the vegetable powder obtained by the method and the precooked food containing the vegetable powder.
