Solubilisate comprises: (a) at least one natural dye that is non-soluble or only poorly soluble in water (b) at least one emulsifier having a hydrophilic-lipophilic balance-value of 8-19 (c) at least two antioxidant agents, where the dye and the antioxidant agent are present together in a micelle and optionally (d) water. An independent claim is included for a method for preparing the solubilisate comprising: (i) preparing a first mixture from the natural dye and emulsifier (ii) heating the first mixture at 80-150[deg] C, where the temperature adaptably adjusted to the characteristics of the dye (iii) cooling the first mixture to 50-70[deg] C (preferably 58-62[deg] C) (iv) preparing a second mixture from water and antioxidants (v) heating the second mixture at 60-70[deg] C (preferably 63-65[deg] C) (vi) combining the first and the second mixtures under homogenization and heating at 80-90[deg] C (preferably 84-86[deg] C) to form the solubilisate, in which the dye and the antioxidant are together present in the micelle and (vii) cooling the solubilisate to a temperature below 50[deg] C.
