The present invention provides a dumpling producing method and a dumpling producing device. The method comprises the following steps: cutting a mechanically sheeted dough sheet of a unidirectional texture into dumpling wrappers of a pre-defined shape, filling the stuffing into the dumpling sheet, and wrapping the dumpling wrapper along a fold line at an angle of 0 to 20 degrees to the texture orientation of each dumpling wrapper to produce the dumplings. The device comprises: a cutting mechanism consisting of a cutting unit and a rotating unit, wherein the rotating unit is configured to cause an angle formed between the texture orientation of the dumping wrapper and the fold line to be within 0 to 20 degrees.La présente invention porte sur un procédé de production de boulettes de pâte et sur un dispositif de production de boulettes de pâte. Le procédé comprend les étapes suivantes : la coupe dune feuille de pâte mise en feuille de façon mécanique ayant une texture unidirectionnelle sous la forme denveloppes de boulettes de pâte dune forme prédéfinie, le remplissement de la feuille de boulette de pâte par une farce, et la fermeture de lenveloppe de boulette de pâte le long dune ligne de pliage selon un angle de 0 à 20 degrés par rapport à lorientation de texture de chaque enveloppe de boulette de pâte de façon à produire les boulettes de pâte. Le dispositif comprend : un mécanisme de coupe constitué par une unité de coupe et une unité rotative, lunité rotative étant configurée de façon à faire quun angle formé entre lorientation de texture de lenveloppe de boulette de pâte et la ligne de pliage se trouve entre 0 et 20 degrés.
