PURPOSE: A production method of cereal is provided to use grains or beans, saccharide, and Hericium erinaceum for offering excellent anticancer and brain function activation effects. CONSTITUTION: Dried Hericium erinaceum containing less than 3% of water is heat-extracted using a mixed solvent of water and ethanol. The mixed solvent is distilled to obtain a Hericium erinaceum extract. Crushed grains or bean powder is mixed with the Hericium erinaceum extract, saccharide, and water, and the mixture is extruded.
