PROBLEM TO BE SOLVED: To provide a wheat flour suitable for cooking material, having excellent handleability with less generation of lumps of particles and less scattering of flour.SOLUTION: A granulated wheat flour is produced by granulating wheat flour with water under non-heated conditions, containing 30 to 80 vol.% of flour with a particle diameter of less than 150 μm and 70 to 20 vol.% of flour with a particle diameter of 150 μm or more. The granulated wheat flour has a 50% cumulative particle diameter of 105 to 200 μm, being made by agitation granulation under temperature conditions which allow increase in a pregelatinization degree of raw material flour of 5% or less under non-heated conditions, with an amount of water being 25 to 40 pts.mass relative to 100 pts.mass of the raw material flour.COPYRIGHT: (C)2015,JPO&INPIT【課題】ダマの生成や粉の飛散が少なく取扱い性に優れた、調理材料として好適である小麦粉の提供。【解決手段】小麦粉と水とを非加熱条件下で造粒して得られる、粒径が150μm未満の粉を30~80体積%、および粒径150μm以上の粉を70~20体積%含有することを特徴とする、造粒小麦粉。前記造粒小麦粉は、50%累積粒径が105~200μmであり、非加熱条件が原料粉のα化度を5%以上増加させない温度条件での撹拌造粒により粒立されており、その水の量が原料粉100質量部に対して25~40質量部であることを特徴とする造粒小麦粉。【選択図】なし
