A disclosed method of producing iridescent scorched rice using a natural coloring powder provides iridescent scorched rice using the natural coloring powder, which has a good texture by using an eco-friendly natural coloring powder which can be obtained from the nature and corresponds to iridescence of red, orange, yellow, green, blue, indigo and violet, thereby exhibiting excellent aesthetic sense and harmoniously maintaining natural tastes of rice and powder. The method according to the present invention comprises: a step (S1) of cooking rice； a step (S2) of adopting and preparing a natural coloring powder correspondingly to scorched rice of a color to be made, and uniformly mixing the prepared natural coloring powder with the rice cooked in the step (S1)； a step (S3) of roundly forming a mixture of the natural coloring powder and rice with a weight of 13 to 14 g after performing the step (S2)； a step (S4) of, after performing the step (S3), putting the formed mixture into a mold frame of a scorched rice machine, and baking the formed mixture at the temperature of 170 to 180°C for 9 to 10 minutes depending on material； and a step (S5) of, after performing the step (S4), cooling the baked material in a natural state, and packing and shipping the resulting material.개시되는 천연색소가루를 이용한 무지개빛 누룽지의 제조방법은, 자연으로부터 얻을 수 있고 빨주노초파남보 무지개빛에 대응하는 친환경의 천연색소가루를 이용하여 심미감이 뛰어나고 쌀과 가루의 본연의 맛을 조화롭게 살려서 식감이 좋은 천연색소가루를 이용한 무지개빛 누룽지를 제공한다. 본 발명에 따르면, 밥을 지은 후(단계 S1), 만들고자하는 빛깔의 누룽지에 맞게 천연색소가루를 채택하여 준비하고, 이를 상기 (단계 S1)에서 지은 밥과 골고루 혼합하며(단계 S2), 상기 (단계 S2) 후에, 상기 천연색소가루와 밥의 혼합물을 13~14g의 무게가 나가도록 동그랗게성형하고(단계 S3), 상기 (단계 S3) 후에, 성형한 혼합물을 누룽기 기계의 성형틀 내에 넣고 170~180℃의 온도하에서 재료에 따라 9분~10분 동안 구우며(단계 S4), 상기 (단계 S4) 후에, 구운 재료를 자연상태로 식힌 후 포장하여 출하한다(단계 S5).
