PROBLEM TO BE SOLVED: To provide a substance which exhibits a remarkable effect on denaturation by refrigeration of a protein by adding a minute amount of the substance in preserving a food or a food material by refrigeration, its manufacturing method, and a method of preventing denaturation by refrigeration utilizing this substance.

SOLUTION: Galactomannan is subjected to low-molecularization treatment by microorganisms or an enzyme to manufacture low-molecularization-treated galactomannan having a specific molecular structure. By adding this low-molecularization-treated galactomannan to a food or a food material, the denaturation by refrigeration of the substance added therewith can be prevented.
