The present invention relates to instant rice capable of being eaten by being pre-cooked. According to an embodiment of the present invention, a method for producing the instant rice comprises the following steps: a rice washing step of washing rice； a pack insertion step of mixing a predetermined amount of water and rice washed in the rice washing step and then putting the same into a package； an indirect heating cooking step of preparing rice by heating after immersing the package accommodating water and rice prepared in the pack insertion step into a heat medium which is heated at a predetermined temperature for a predetermined time； and a stabilization step of cooling the package containing the rice prepared in the indirect heating cooking step at a room temperature to remove steam remaining in the package. Accordingly, it is possible to improve product quality, shorten production processes, and reduce production costs.본 발명은 미리 조리되어 바로 취식할 수 있는 즉석밥에 관한 것이다. 본 발명의 실시예 따른 즉석밥의 제조방법은 쌀을 세척하는 세미단계, 상기 세미단계에서 세척된 쌀과 물을 미리 설정된 량으로 혼합하여 포장팩에 투입하는 팩투입단계, 상기 팩투입단계에서 쌀과 물이 수용된 포장팩을 미리 설정된 온도로 가열된 열매체에 미리 설정된 시간동안 담가 가열하여 밥을 짓는 간접가열 조리단계, 및 상기 간접가열 조리단계에서 지어진 밥이 담긴 포장팩을 상온에서 식혀 상기 포장팩에 잔류된 증기를 소멸시키는 안정화단계를 포함한다. 따라서, 상품성을 개선하고, 제조공정을 단축시켜 생산비용을 감소시킬 수 있다.
