The present invention provides a tea extract comprising at least tannin, amino acid and cellobiose. The tea extract comprises 0.8 to 10 mass% of cellobiose based on total solid content of tea extract (conversion into Bx), mass ratio of cellobiose to tannin of 0.03 to 1.0, and the mass ratio of cellobiose to amino acid of 0.08 to 1.0, which is capable of masking bitter and having sweetness, strong and good flavor as well as good flavor balance.本發明提供一種茶類萃取物,其係至少含有單寧、胺基酸及纖維二糖而成,以茶類萃取物的總固體成分(以Bx換算計)作為基準,含有纖維二糖0.8至10質量%,纖維二糖/單寧的質量比為0.03至1.0,且纖維二糖/胺基酸的質量比為0.08至1.0,苦澀味受遮蔽,富含甘味、濃味、鮮味,且風味均衡性良好。
