PROBLEM TO BE SOLVED: To solve problems in the conventional technique and to obtain a fermented milk having a hardness in a degree of being capable of maintaining structure upon circulation by economically advantageous means.SOLUTION: Provided is a method for producing a fermented milk comprising a process where a raw material mix is homogenized under high pressure, and fermentation is caused in such a manner that the average particle diameter of fat is reduced. In particular, this invention is a method comprising a process where a raw material mix is fermented to produce a fermented milk, in which the raw material mix is pasteurized, thereafter, the fat of the raw material mix is homogenized under high pressure, and fermentation is caused.
