PROBLEM TO BE SOLVED: To provide a stable water-soluble carotenoid composition that hardly decomposes with time by imparting water solubility to a carotenoid that is insoluble in water and tends to decompose with light or heat, and medicines, cosmetics and foods containing the composition.SOLUTION: A mixed solution of the carotenoid dissolved in a polar organic solvent and a monosaccharide and/or amino acid dissolved in water is dried to obtain the water-soluble carotenoid composition stable in water.
