PROBLEM TO BE SOLVED: To provide a pretreating agent capable of shortening the pretreatment process performed before the steaming-boiling treatment of frozen octopus to impart oxidation prevention effect by a single process, removing the slime of octopus, preventing the peeling of the skin after the steaming treatment and getting pretty red color developed after the steaming treatment.SOLUTION: The composite preparation for processing contains a treating component composed of erythorbic acid, ascorbic acid, their alkali metal salts or their mixture and an acidic component composed of an organic acid, an acidic phosphoric acid compound or both of the above substances.
