PROBLEM TO BE SOLVED: To provide a pretreatment agent shortening a process of a pretreatment conducting before a steaming and boiling treatment of frozen squid and adding antioxidation effects with one time process, removing slime and preventing peeling of skin after the steaming process, and capable of providing good red coloring after the steaming process.SOLUTION: A composite preparation containing a treatment component containing erythorbic acid, ascorbic acid or alkali metal salts thereof or their mixtures, an acidic component containing an organic acid or an acidic phosphate compound or both of them, and having the content of the treatment component of 40 wt.% to 75 wt.% in the total, and pH of 2.5 to 6.0 when made into 0.4 wt.% solution is prepared.COPYRIGHT: (C)2014,JPO&INPIT【課題】冷凍イカの蒸し・煮沸処理の前に行う前処理の工程を短縮して、一度の工程で酸化防止効果を付与し、ヌメリをとって蒸し処理後の皮めくれを防止するとともに、蒸し処理後に良好な赤い発色を得られる前処理剤を提供する。【解決手段】エリソルビン酸、アスコルビン酸、若しくはそれらのアルカリ金属塩又はそれらの混合物からなる処理成分と、有機酸、酸性のリン酸化合物、又はその両方からなる酸性成分とを含み、上記処理成分が全体に占める含有率が40重量%以上75重量%以下であり、0.4重量%水溶液としたときのpHが2.5以上6.0以下である加工用複合製剤を調製する。【選択図】なし
