PROBLEM TO BE SOLVED: To provide a pretreating agent for shortening a pretreating process to be performed before steam and boil treating frozen octopus, giving an antioxidation effect in a single process, removing slime to prevent turning up of the skin after steam treating, and enabling obtaining excellent red color development after steam treating.SOLUTION: A complex drug for processing contains a treatment component comprising erythorbic acid, ascorbic acid, their alkali metal salt, or their mixture, an acid component comprising organic acid, an acid phosphate compound, or both of them. The rate of content of the treatment component in the whole is &ge35 wt.%.
