PROBLEM TO BE SOLVED: To provide a sprinkle type mix for deep-fried foods that makes it possible to conveniently make deep-fried foods which have good textures of both coats and ingredients to be fried and are less prone to degradation with time after its production.SOLUTION: A sprinkle type mix for deep-fried foods comprises 0.1-5 mass% of fermentation seasoning powder that is powder of alcohol or acetic fermentation products derived from fruits, and has pH of 3-6 or 8-11, and 0.1-3 mass% of glycerine fatty acid ester.【課題】衣及び揚種共に食感が良好で、製造後の経時劣化が少ないから揚げを簡便に製造し得る、まぶしタイプのから揚げ用ミックスを提供する。【解決手段】果実のアルコール又は酢酸発酵物の粉末であり、且つpHが3~6又は8~11である発酵調味料粉末0.1~5質量%と、グリセリン脂肪酸エステル0.1~3質量%とを含有するまぶしタイプのから揚げ用ミックス。【選択図】なし
