The present invention relates to a manufacturing method of lotus taffy and lotus grain syrup, which comprises the following steps: mixing lotus powder including dried lotus root powder, dried lotus leaf powder, and dried black lotus root powder with rice powder, purified water, liquefied enzymes, and saccharified enzymes in a predetermined ratio liquefying and saccharifying the mixture by treating the mixture at a predetermined temperature for a predetermined time to hydrolyze hydrogen bond of starch and filtering and concentrating the hydrolyzed mixture.
