PURPOSE: Red pepper paste with alpha-glucosidase inhibitory activity and a producing method thereof are provided to prevent hyperglycemia in users. CONSTITUTION: A producing method of red pepper paste comprises the following steps: obtaining a red pepper extract with high alpha-glucosidase inhibitory activity from leaves of the red pepper with high alpha-glucosidase inhibitory activity； mixing the red pepper extract with red pepper powder obtained from the red pepper with the high alpha-glucosidase inhibitory activity to obtain a red pepper paste mixture； grinding water soaked glutinous rice, and steaming； mixing the steamed glutinous rice with the red pepper paste mixture； and aging the mixture for a predetermined time. 본 발명은 AGI 활성이 높은 고추품종으로부터 채취한 고추잎에 에탄올을 가하여 일정시간 동안 진탕 추출하고 이를 원심분리하여 상등액을 취함으로써 AGI 고활성 고추잎 추출물을 얻는 단계와； 물에 불린 찹쌀을 마쇄하고 증자하여, 여기에 AGI 고활성 고추잎 추출물과 AGI 활성이 높은 고추품종으로부터 수확한 고추로부터 얻어진 고춧가루를 포함한 고추장혼합물을 투입하여 혼합하는 고추장 담금단계와； 상기 고추장을 일정시간 숙성시키는 숙성단계；를 포함하는 알파 글루코시다제 억제제 활성 고추장 제조방법을 특징으로 한다.
