The present invention relates to a device for suppressing browning and sterilizing fruit and vegetable juice using a high-temperature steam sterilization method. According to the present invention, the steam sterilization method and the steam sterilization device apply high temperature steam and conduct sterilization with latent heat introduced after undergoing a phase change, thereby suppressing browning in the fruit and vegetable juice including radish juice. Thus, the steam sterilization method and the steam sterilization device can be useful for food processing and pretreatment for the processes.본 발명은 고온의 스팀살균방법을 이용한 과채즙의 갈변 저해 및 살균장치에 관한 것이다. 본 발명에 따른 스팀살균방법 및 스팀살균장치는 높은 온도의 스팀을 처리하고 상변화를 통해 유입되는 잠열로 인해 살균함으로써 무즙을 비롯한 과채즙의 갈변을 억제할 수 있으므로 식품의 가공 및 가공의 전처리에 유용하게 사용될 수 있다.
