PURPOSE: A manufacturing method of a soy source and a soybean paste is provided to effectively reduce the side effect of lacquer tree using multi-phased processes, and to maintain the medicinal properties of painted tree sap and lacquer tree through a fermentation process. CONSTITUTION: A painted tree sap collected less than 7 days and salt are prepared. One to three kilograms of lacquer tree, 3-6kg of salt, and 25-40l of painted tree sap are added to 6kg of fermented soybean lump and aged. A lacquer is dried in the sun until the moisture content is less than 5% after harvest and cut. The dried lacquer tree is re-dried in the sun after impregnation into a mixture of the egg york and perilla oil. The mixture of the egg york and perilla oil is made by mixing less than 5 egg yorks per 1l of perilla oil.본 발명은 옻나무와 고로쇠 수액, 소금 및 메주를 주성분으로 하여 간장과 된장을 제조하기 때문에 옻나무의 약용 성분과 물을 사용하지 않고 고로쇠 수액을용수로 사용하여 순수한 고로쇠 수액이 가지는 약용성분을 그대로 섭취할 수 있도록 하기 위함에 있다.이러한 목적을 달성하기 위하여, 통상적으로 제조한 메주, 옻나무를 채취하여 절단한 다음 함수율 5%이하가 되도록 햇볕 아래에서 건조를 행하고, 이를 들기름과 계란 노른자를 혼합한 혼합액에 완전히 함침시킨 다음 이를 다시 꺼내어 햇볕에서 건조작업을 행하는 것에 의하여 최종처리한 옻나무,채취한 지 7일을 경과 하지 않은 고로쇠 수액 및 소금을 구비하여,장독에 투여하는 메주 6Kg을 기준으로 상기 최종 처리한 옻나무 1 ∼ 3Kg, 소금 3 ∼ 6kg, 고로쇠 수액 25 ∼ 40ℓ을 투여하여 숙성단계를 거친 것에 의하여 간장과 된장을 제조하는데 그 특징이 있다.
