PROBLEM TO BE SOLVED: To provide a method of manufacturing a sterilized liquid egg, supplying the liquid egg having excellent preservability without impairing the product value.SOLUTION: According to the method of manufacturing the sterilized liquid egg, the liquid egg is homogenized, and then a sealable container is filled with the liquid egg. After the container is sealed, sterilization is performed at 65-70°C for 5-10 minutes. Preferably the homogenized liquid egg is pre-sterilized at 58-62°C for 2-4 minutes. Further, preferably 25-1 iu/g nisin is added to the liquid egg.
