PROBLEM TO BE SOLVED: To provide a production method of a bottled sterilized whole egg liquid for obtaining egg soup that contains a coagulated egg having the high transparency of the egg soup and film-like pleats with a larger surface area compared with a thickness when used for the production of the egg soup, and to provide the bottled sterilized whole egg liquid.SOLUTION: The production method of the bottled sterilized whole egg liquid includes a filtration process for filtering the whole egg liquid with a strainer with a small opening of 10-100 μm, and a sterilization process for sterilizing the filtered whole egg liquid at a temperature of goods of 59-63°C where the sterilization process causes thermal denaturation so that the viscosity (20°C) of the sterilized whole egg liquid is enhanced to 100-2,000 mPa s.COPYRIGHT: (C)2013,JPO&INPIT【課題】卵スープの製造に用いた場合、卵スープの透明度が高いうえに、厚みに比して表面積が大きい膜状のヒダを有する凝固卵を含有する卵スープを得ることができる容器詰め殺菌液全卵の製造方法、ならびに当該容器詰め殺菌液全卵を提供する。【解決手段】容器詰め殺菌液全卵の製造方法は、液全卵を目開き10~100μmの細かいストレーナーでろ過するろ過工程、およびろ過した前記液全卵を品温59~63℃にて殺菌する殺菌工程を含み、前記殺菌工程により加熱変性させ殺菌液全卵の粘度(20℃)を100~2000mPa・sに高める。【選択図】なし
