The present invention provides a method of producing an alcohol-dipped material or a food or drink using the same which comprises the following steps: (a) freezing one or more fruits and/or vegetables employed as a raw material； (b) micro grinding the frozen matter； and (c) dipping the micro ground matter in an alcohol having a concentration at which one or more components of the raw material can be extracted (preferably a 15% to 100% alcohol). The alcohol-dipped material thus obtained can be suitably usable as a starting alcohol drink for producing a low-alcohol drink. According to the method of the invention, the alcohol-dipped material or the food or the drink thus obtained can contain a sufficient amount of an efficacious and effective component contained in the vegetable(s) and/or fruit(s), for example, vitamin P.(a) 원료 과실 및/또는 야채의 1 종 이상을 동결시키고； (b) 동결물을 미분쇄하고； 그리고 (c) 미분쇄물을, 원료 성분의 1 종 이상을 추출 가능한 농도의 알코올 (바람직하게는 15%∼100% 알코올) 에 침지하는 공정을 포함하는, 알코올 침지물 또는 그것을 사용한 식품 혹은 음료의 제조 방법을 제공한다. 얻어진 알코올 침지물은, 저알코올 음료의 원료주로서 바람직하게 사용할 수 있다. 본 발명의 제조 방법에 의하면, 얻어지는 알코올 침지물 또는 식품 혹은 음료에 과실ㆍ야채에 함유되는 효능, 효과가 있는 성분, 예를 들어 비타민 P 를 충분히 함유시킬 수 있다.
