The present invention relates to flavour generation. In particular the invention relates to a process for generating a flavour composition. The process comprises milling a mixture comprising flavour precursors in the solid state.A further aspect of the invention is a food product comprising the flavour composition obtainable by the process of the invention.La présente invention concerne la production d'arômes.
