PROBLEM TO BE SOLVED: To provide a method for producing a whey protein composition to which a fatty feeling is imparted and which is excellent in thermal stability.
SOLUTION: The method for producing the whey protein composition includes: a process for mixing whey protein, a polysaccharide thickener, and a solvent to prepare a whey protein-polysaccharide thickener mixed solution and a process for swirling and flowing the prepared whey protein-polysaccharide thickener mixed solution to be like a thin-film cylinder, continuously mixing the swirling whey protein-polysaccharide thickener mixed solution in contact with the following whey protein-polysaccharide thickener mixed solution, and shearing the whey protein-polysaccharide thickener mixed solution, swirling like a thin-film cylinder in continuous contact mixing, for 8 minute to 0.1 seconds at a temperature within a range of 85-120°C with a shear rate of 15,000 to 25,000 s
