PROBLEM TO BE SOLVED: To provide a curcumine composition excellent in water dispersibility, mixable with food and drink by bringing curcumine which is hard to dissolve in water into a composition which easily disperses in water, free from causing precipitation of curcumine-containing particles even if preserving for a long period, retaining high stability to light, and having no bad influence on palate feeling and flavor of food and drink added therewith.SOLUTION: This curcumine composition is obtained by crushing curcumine-containing particles to 210-420 nm in the presence of an emulsifier and an aqueous solvent.COPYRIGHT: (C)2009,JPO&INPIT【課題】本発明の課題は、水に溶けにくいクルクミンを水に分散しやすい組成物とすることによって飲料等への配合を可能とし、長期間保存してもクルクミン含有粒子の沈殿を生じることがなく、光に対する高い安定性を保持し、かつ、添加された飲食品においても食感や風味等に悪影響を及ぼすことのない水分散性の優れたクルクミン組成物を提供することにある。【解決手段】クルクミン含有粒子を乳化剤、水系溶媒の存在下210ナノメートル以上420ナノメートル以下に粉砕することにより上記課題を解決する。【選択図】なし
